yum! I am flying home in 2 days! Think I will make some ginger crunch! Looking forward to yoyos and my mum’s shortbread made with Nana’s recipe!

Caramel slice! We did Lamingtons as a school fundraiser one year and after making over 400 1/2 dozen plus, over 15 years later I still can’t face them!

Aaaagh! I can imagine. These days school fundraisers involve selling bars of Cadbury chocolate door-to-door. The schools get a cut, but it’s just a huge cheap marketing campaign for Cadbury. I have heard that some schools have ditched the chocolate in favour of EcoStore soaps. Now that I’d buy!

I’ve never heard of ginger crunch, or lamingtons, or caramel slices!! Each one of these I’ve had to write down so I can google a recipe and try it!

Thanks Joanne. Lamingtons are really fiddly to make, but ginger crunch is very easy (hence it gets made in our house quite a lot). The version I had yesterday had a rolled oat base rather than the usual shortbread, so it was more like Anzac biscuits with ginger icing. Now I’ve got you really confused right?? Caramel slice is also a bit fiddly and VERY rich — biscuit-y base, layer of caramel and melted chocolate on top — so it’s perfect to share.

I looked up each of these and the caramel slices appear to be a version of our Canadian Nanaimo bars. They look similar and the recipe has *some* similarities. Yum.
