It was Janet! I really prefer home-made to shop bought because I find the commercial ones too sweet. This is the recipe I use: http://britishfood.about.com/od/recipeindex/r/pickonions.htm
I leave out the chilli flakes and cut the sugar back to 120g per kg vinegar. I did worry at first about whether that would affect the keeping quality of the onions but I haven’t had a problem.
http://britishfood.about.com/od/recipeindex/r/pickonions.htm It is a really easy one that I’ve used for a couple of years. The webpage says it was updated last year; I think the addition of chilli flakes might be new because I’ve never added those. Happy pickling Leslie. Su.
A fitting tribute, Su π

Hmmm. I’ve never eaten a pickled onion.

Add them to the “must-try” list. Pickled onions, a few slices of hard cheese and some good bread. The perfect lunch.
