Experimenting with a new recipe for something a little sweet but without dairy and refined sugar. This slice contains almond meal, coconut oil, buckwheat, rice syrup, raspberries, chia seeds and very dark chocolate. Once I got it out of the fridge, the raspberry layer began to melt pretty quickly.
The photo isn’t great, but the slice tasted pretty good.

Wonderful photo, Su! Love the plate you chose, contrasting the blue with the red. Is that a gold rim? Wonder about the recipe, and how you achieved that dark chocolate slab that isn’t too sweet. Scrummy!

The plate rim is very dark blue, so that must be a trick of the light.
The topping was a mix of 72% cocoa solids chocolate and coconut oil. There is sugar in the chocolate, but less than half what’s in other dark chocolates I’ve found.

How interesting about the rim and how lighting can so change things. (Also might be this tablet.😉) Thank you for describing the chocolate. Will keep my eyes peeled for something similar. 😘

Lindt make a few very dark chocolate bars which I sometimes use, but my favourite is a local brand — Whittaker’s. It is delicious and I like supporting NZ companies.

Have just looked up Whittaker’s and am sad to surmise they don’t export to us, although their logo looks so familiar. Puzzled about that…

I do not have a sweet tooth but I could walk 10 miles for a dessert with raspberries and dark chocolate or any dessert with lemon. I cannot resist a lemon pie nor lemon mousse.

Hehe. I’d be walking with you. Lemon tart and lemon sorbet are my absolute favourites. I used to make lemon curd, but stopped when I realised I’d started spooning it out of the jar and straight into my mouth.

That’s such a concern with bought products; part of the reason I bake. I know exactly what’s gone in to my food.

☹️ without the chia seeds it would just be raspberries, and it wouldn’t hold together. I guess an agar-based jelly might work as a replacement 🤔

Since I’m known for not eating raspberries but inhaling them instead – btw if you want to eat any don’t let me see, I’m really ruthless around them 😉 – I wouldn’t have a problem with it not having any consistency. 😄 I’ve heard it’s quite shocking seeing me eat them, like a zombie gone wild! 😂

I don’t know if there are thought to be problems with it. I like the taste and texture and the fact it feels less sweet than, say, maple syrup.

and side note – I just got this immune system herbal liquid drops (source naturals) and was pleasantly surprised that it had honey.
I have had such little sweet tasting stuff – not complaining because sometimes stevia allowed me a nice Bev – or some berries (certain fruits are a no no cos of the high sugar – like bananas, mangoes, grapes – etc – because healing the body’s terrain has to be done with as little sugar as possible – at least for us)
anyhow, all week this liquid-drop formula has been a huge treat – partly because of the herbs and it did boost my energy – and wellness feeling – but it was also that honey – I was reminded of how wonderful honey can be – (not too much of course…) ahhhh
